Once that’s done, the pizza is placed in an oven heated to 1000 degrees, with the finished product ready within 2 minutes. The restaurant hasn’t been anything short of busy since it opened. During its first three days, between 700 and 800 pizzas were made, according to Petruzzi.

“I think we’ve done great so far,” he said. “I was nervous because the concept is new where we’re relying on the customer to pick out what they want. We’re really happy with the response to that.” The Neapolitan pizzas aren’t sold in individual slices, and a gluten-free option is available. The flour used for the dough is Tipo “00,” which is considered the finest grain of flour used for Neapolitan pizza.

The store’s oven is large enough to cook up to 15 pizzas at once. The center of the oven is set at 1,000 degrees, while the outer edge is a few hundred degrees cooler.

Petruzzi said customer feedback had been positive since the restaurant opened, with many already returning on multiple occasions.

“It’s really good,” city resident Emily Zadroga said about her broccoli-covered pizza. Next to Zadroga, her friend Simone Livingston left only the crust from a plain cheese pizza.
